3 GENERATIONS WITH A PASSION

FOR LEADERSHIP & BREAKFAST

The story of Egg Harbor Café begins with Jack and Paula Wright, college sweethearts from Northwestern who shared a love of early mornings and breakfast. In 1984, after Paula spotted an ad in the Chicago Tribune for a new breakfast concept called “The Good Egg,” the Wrights partnered with its founder. Together, they combined his restaurant experience with their business vision. Joined by their daughter Aimee and her husband Mike, they opened the first location in Hinsdale, IL, driving a U-Haul from Oregon and working long hours to bring their dream to life.


As the business grew, Mike led operations and Aimee managed administration, both deeply focused on leadership and hospitality. What began as a family’s shared passion for breakfast has grown into a thriving, family-owned brand spanning three generations. Today, Mike and Aimee have passed the helm to their son Matt, who continues to expand Egg Harbor Café across Illinois, Wisconsin, Georgia, and now Colorado; staying true to the family’s passion of improving lives, one encounter at a time.
